Three mushroom soba noodle soup, Japanese style.
I got a pack of beautiful and fresh organic Oyster, Shitake and Enoki mushrooms at the local farmers markets on Saturday! Been planning this meal for a couple of days and it didn’t disappoint.
The broth is made with dashi, mirin, tamari and a dash of sake! So healing and hearty! Substitute the dashi (Japanese fish stock) for vegetable stock for a vegan alternative.
Stir fried mushrooms and veg, served on a bed of organic buckwheat soba noodles. Ladle the broth over, slurp and savour! This is a true winter warmer.
